Cooking Class Recipes - Chilli Con Carne


This week the cooking class made Chilli Con Carne. It comes in at £1.22 per portion, using the basics/value ranges from the main supermarkets.

Ingredients (serves 2 people):




  • 225g of beef mince - £1

  • 1 medium onion - £0.20

  • 1 clove of garlic - £0.05

  • 1 tin of chopped tomatoes - £0.34

  • 1 tin of kidney beans - £0.30

  • 1 beef stock cube - £0.02

  • ½ or 1 teaspoon of chilli powder - £0.05

  • 1 teaspoon of mixed herbs - £0.06

  • 1 small carrot (optional) - £0.05

  • ½ green pepper (optional) - £0.30

  • 125g rice - £0.05

  • salt and pepper to taste


Total price: £2.42

Price per portion: £1.21


 

How to make:

1) Put the mince into a large pot and brown it.

2) Chop the onion and garlic and add it to the mince, frying it all for a few minutes.

3) Add the chopped tomatoes, mixed herbs, chilli powder, stock cube, and the carrot and pepper (chopped) if using. Bring to the boil.

4) Reduce the heat and simmer gently for around 20 minutes, and then add the kidney beans, cooking for a further 10 minutes. Add a little water if needed, and salt and pepper to taste.

5) Serve with rice, cooked according to packet instructions.
